Chef Jerome La’Brooy spices up Urban Kitchen

What everyone really wants is to enjoy a simple meal; a meal that consists of a fusion of flavours, is something somewhat (at least) healthy, and something you’d perhaps not always find in other restaurants.
The Urban Kitchen located next to Arpico at Hyde Park Corner is a comfortable spot; a place where you’d find a variety of newly introduced dishes, a blend of the West and East cuisine.

Jerome La’Brooy – Chef de Cuisine of Urban Kitchen was kind enough to take time off his post behind the open kitchen and introduce me to an exotic array of mouth-watering dishes.
It was Jerome who was the brainstorm behind the newly introduced menu; he started off working as a chef in 1979 at the Intercontinental Hotel (now Ceylon Continental).
Two years afterwards, he travelled to the Middle East where he worked in Abu Dhabi, Dubai, Bahrain and also Cyprus as part of the Hilton Group of hotels.
He then crossed over to the Asian continent and worked in Thailand for some time and then Australia in various hotels and restaurants.

“I gave up cooking for a while and went into being involved with exporting food items out of the country. This change in my usual routine of cooking food, gave me an insight of what went on at the farms, how they grow food items etc. For instance, you need a ripe tomato for a sauce and semi ripe one for a salad etc, stuff that a chef would generally not know which increased and developed my skills in cooking further,” he added.
He is also a part of a company based in Sri Lanka that imports fine food products to most of the main hotels.
A year and a half ago, he happened to cook a meal for one of his partners and it was then that the idea of opening a restaurant came into mind.
“My initial thought was that if we were to do something, we needed to do something different,” revealed Jerome.
Hence, the canteen that stood previously was ripped apart and opened up as the current restaurant’s kitchen and dining area. A new beer and wine bar is located at the premises and the future holds a spot of a sushi bar as well as a salad bar.

Leafing through the colourful menu, my eyes dart from one list of sandwiches to wraps, from pasta to pizzas, burgers to Asian cuisine and much more. A long list of salads and vegetarian dishes also meet my eye; Jerome enlightens me on the number of different types of green and lettuces that are used in his kitchen – mostly grown in his own backyard, all lettuces used have different flavours that, once combined in a salad, gives off a very unique flavour altogether.

“We put in a lot of effort to what we do; we’re very passionate and although it’s been a long and hard journey, we like to keep a certain standard of great tasting healthy meals going. We’re very happy with what we have done here. The CMC has been using us as a role model for all other food courts (recently also won an award for best model restaurant for food safety and hygiene).”

The hotel’s Indian Chef, Sanjaya Prasad Bhatt is the new member of the team; his specialty in serving Indian food has been shaped over the years by working in such exotic five star locations in north India.
Chef Buddha Bahadoor and the ably qualified Muneesh Sharma, with his eight years of experience and Bachelors in Hotel Management from the University of Bangalore, make-up the rest of the team.
