Potatoes can be prepared in many ways. Fried, baked, boiled, just to name a few. Out of these, one of my most favorites ways to make potatoes are as hash browns. Hash browns are perhaps one of the best excuses to have something fried for breakfast. The recipe is simple and quick which means there is absolutely no reason as to why these cannot be made at home.

2 medium potatoes
¼ of a medium onion chopped
1 large egg - beaten
2 tablespoons of oil
Salt and pepper  to taste
Makes four hash browns

1. Peel and rinse the potatoes. Shred the potatoes using a greater. Remove as much liquid as possible from the potatoes by pressing in a colander or squeezing in a clean dish towel.

2. Place the shredded potatoes, chopped onion and beaten egg in a mixing bowl and mix well.

3. Heat oil in a large frying pan over medium-high heat. Dollop a ¼ cup scoop of potato mixture into the pan. Flatten the scoop with a spatula to form a patty. Season to taste.

4. Cook for five minutes. Flip the patties over and cook five more minutes. Transfer to stacked paper towels to remove excess grease.
